Kaiserwinkler delights
The hay-milk cheese is the culinary trademark of the Kaiserwinkl. The special thing about this cheese is the raw material. The milk may only come from cows that are not fed any fermenting feed, i.e. silage. Kaiserwinkl is also part of the Kaiserweis cheese region; nowhere else in the Alpine region is there such a density of cheese expertise as here.
Blooming alpine meadows, crystal clear streams and fresh alpine air are the basis for the best BIO products from our region. Aromatic herbs, and fragrant hay are fed to the cows so they give the incomparable hay milk. In this milk lies the secret of the exquisite quality of hay-milk cheese. You will be able to try spicy mountain and alpine cheese, fine Emmentaler, aromatic senna cheese, unique chive cheese, fine beer cheese, and many other cheese delicacies. Not only the famous cheese but also many other delicacies are made here in the Kaiserwinkl region. You wil alsol find Tyrolean bacon and meat specialties, homemade pasta, hand-picked teas, schnapps & liqueurs, beers & vinegar, exceptional chocolates, fresh farmhouse bread, healthy bee honey, freshwater fish and much more - all in outstanding BIO quality.
Cheese production
In the Kaiserwinkl region seven alpine dairies produce their milk exclusively as hay-milk and process it into hay-milk cheese without any additives. It has long been a regular item in supermarkets and can be found on the breakfast buffets of vacation hotels. Bacon, too, is ultimately a hay-milk product, since the pigs that supply it are fed with the whey produced during the cheese-making process.
Nowhere else exists a density of this extent of cheese dairies as in the Kaiserwinkl region.
The cheese and the other regional delicacies, are not only tasted here, but also celebrated, such as at the annual Kaiserwinkl Kasfest in Kössen. In this festival, guests are spoiled with regional delicacies, can indulge their shopping passion at the farmer's market and are entertained by various bands.
Recipes from the Kaiserwinkl
The popular book "Kössener Küchenschätze" has been reissued and is now available again in the information offices (€ 19.90). The colorful collection of recipes was compiled by the local group of Kössen and Schwendt "Tiroler Frauen".The book was first time published in 1988 and is not only filled with all kinds of recipes to re-cook but also peppered with poems and stories from the Kaiserwinkl.

For gourmets, Kaiserwinkl is like a big treasure chest. There are tempting specialties to be discovered around every bend. Experts of good taste with carefully grown traditions and new ideas can be found in almost every village. Sometimes it is centuries-old farms with high-quality local products, schnapps distillers, beer brewers, sometimes it is seasoned, cozy inns and producers who still traditionally process natural ingredients by hand.
